Duck with Seeds and Chickory

Duck with Seeds and Chicory

Ingredients:

Derwent Valley Free Range Duck Eggs


Method:

Cook the duck eggs in a water bath at 63°c for 90 minutes.                               
Peel when ready to serve.


VANILLA POACHED CHICORY

Ingredients:


Chicory 1 (reserve some raw for garnish)                                   
Vanilla Pod 1
Water 300ml
Sugar 150g


Method:

Weigh out all the ingredients.
Bring the water, sugar and vanilla to the boil.
Pass through a fine sieve and allow to cool slightly.
Break the chicory into single leaves, put in a vac-pac bag, pour over syrup and seal.





RASIN PUREE

Ingredients:
Rasins 100g
White Wine 100ml
Brown Sugar 3 tbsp


Method:

Weigh out all the ingredients.
Bring the raisins, wine and sugar to a simmer.
Cook for 8 minuets.
Blitz and pass the puree.






DUCK BREAST (sous vide)  

Ingredients:

Caster Sugar 100g
Salt 100g
Garlic 1 clove
Yellow Mustard Seeds 1.5g
Powdered Ginger 1.5g
Bay Leaf 1
Cloves 7
Juniper Berries 10
Black Peppercorns 3.5g
Coriander Seeds 1.5g
Curing Salt 2g
Water 1000ml
Duck Fat 50g


Garnish:

Linseed
Fried Pumpkin Seeds
Yellow Mustard Seeds


Method:

Weigh out all the ingredients.
Combine all the ingredients except the water.
Bring 250ml of the water to the boil.
Add the boiling water to the rest of the ingredients.
Add the remaining water and chill completely.
Cure the duck breast for 3 hours.
Remove the duck from the cure and pat dry.
Refrigerate uncovered for 1 hour.
Vac-pac the breast with the duck fat and cook @ 60.5c for 25 minutes.
When the duck breast is cooked, remove the skin and any fat.
Half each breast, square off and re vac-pac.



SOY GLAZE

Ingredients:

Red Wine 100ml
Soy Sauce 100ml
Brown Sugar 2 tbsp


Method:

Weigh out all the ingredients.
Reduce the wine by half.
Add the soy sauce and brown sugar.
Reduce to a syrup consistency and chill.


DISH ASSEMBLY



Heat the breast in the water bath at 60°c.
When warm glaze with soy, garnish with mustard seeds, fried pumkpin seeds and linseed.
Slice the vanilla poached chicory and raw chicory and bring up to room temperature.
Garnish the plate with the raisin puree, then place on the garnished duck breast.
Carefully peel one egg and place onto the plate and garnish with pine salt.
Garnish with both types of chicory and pine oil.






Our HensDavid uses eggs sourced from Lintz Hall Farm whose family have been producing eggs in the North East for four generations and have lived at Lintz for over 60 years.

Set in the heart of the Derwent Valley, Lintz Hall is a mixed farm where free range hens share their fields with sheep cattle and horses.  



Our Farm

All of their Free Range Hens roam freely and are monitored by the RSPCA. Their eggs are produced to the exacting standards of the Lion CodeThey take great pride in their farm and the products they supply, which is why they do the whole job from start to finish.  Within hours of being laid, eggs are graded and packedn-site and delivered direct from the farm.

Tempered Goose Egg Yolk with Goose Sobrasada,Crispy Whites and Truffles

Native Andalusian Dani Garcia of Calima restaurant in Malaga is a 2 Michelin Star chef who is also responsible for the various products developed at Ganso Iberico and a promoter of it in the Gastronomic World.




The key to his creations is remaining true to his Andalusian roots, mixed with an incredible imagination and the use of scientific techniques.  He first came to the fore in Tragabuches restaurant in the spectacular mountain town of Ronda (Málaga) where he demonstrated his interest in culinary innovation.  




In 2004, he was taken on by the Meliá hotel group to set up the Calima restaurant in Marbella.  For a time he was the only European chef, apart from Heston Blumenthal and Ferran Adrià, to use the properties of nitrogen in cuisine. Some examples of this innovative technique are his 'frozen raff tomato popcorn with raw Motril baby shrimp', and 'cold olive oil semolina with ham and croutons'.




TEMPERED GOOSE EGG YOLK with GOOSE SOBRASSADA, CRISPY WHITES and TRUFFLES

To temper the Yolk
4 yolks from Ganso Iberico Geese

Place yolks individually in a porcelain container with a bit of olive oil to prevent them sticking together.  Cover with cling film and place in 85 C oven for 5 minutes.

For Crispy Whites, beat the whites and fry in plenty of sunflower oil until golden and crispy,drain and reserve,keep warm.




Accompaniments

Madridfusion15 grams of Sobrassada (Goose chunky sausage from Ganso Iberico) per person
2 pears
Crispy Bread
Summer Truffles (in summer time or black in winter)

Slice the bread finely and toast in oven until crispy.

Dice the pear in medium squares and saute a bit.

100% goose Sobrassada

Cook and crumble your sobrasada.

Mix the saute pear with the sobrasada and place on bottom of plate.

Very carefully place the tempered goose egg yolk on top of this crumble.

On top of it,place the crispy ,broken pieces of crispy bread and slices of Truffle to taste.

Ganso Iberico is the dream project of Juan Carlos Verona, a biologist enamored with these animals since the start of his professional career.




While staying in Otero de Sariegos, an uninhabited village close to the lakes of Villafafila(Zamora),he had the experience of tasting an ancient traditional stew made with goose from the area.
Under the spell of candlelight and old tales about the arrival of geese for the 12th of October the idea for this project was born.  In 2010,the initial research started about ecological dehesas and Ganso Iberico was created.



METHOD OF BREEDING THAT REPLICATES THE CYCLE OF LIFE AND HABITAT OF THE GEESE IN THE WILD

The Goose

The chicks are brought to us from the Perigod region in France, less than 48 hours from their birth.  In this way they get ecological production accreditation and are free to spend the rest of their lives in freedom and outdoors in La Dehesa (this becomes their vast geese run).

Their feed varies according to season and nutritional needs, but it is composed of natural grass,cereals that are produced in the  ecological crops and also acorns.



They have a herder and a dog that guide them to different places in the estate to get better feed and also many watering lagoons where they can have baths and preen, just as they would if they were wild.  This existence makes them lay exceptional eggs, as well as providing a succulent aromatic meat.  The laying huts of Ganso Iberico are divided between Sevilla and  Avila farms, home to 3000 geese.




THE EGG has an average weight of 170  to 180 grams. It is an egg high in proteins,energetic and healthy due to its high level of unsaturated fats.

THE YOLK is dense and  deeply flavorsome derived from its diet of natural grass and Acorns as well as their outdoor lifestyle and extensive farming.




LA DEHESA


A project linked to a unique ecosystem and characteristic of the Iberian peninsula that conforms La Dehesa, what gives it the distinction of being Iberian.  From a system of extensive breeding in the middle of nature, taking advantage of the goodness of La Dehesa they obtain an egg of optimal quality, Artisan and ethical, pioneers in the market.



It connects with the needs of a consumer that is more and more aware of the importance of sustainability, quality and provenance.  In search of quality there is extensive work in breeding, natural feeding and the well being of the geese in order to develop and bring in to the market a quality product.  They are the only farm of this size that does not force feed its geese.

Wild Garlic Twice Baked Cheese Souffle

WILD GARLIC TWICE BAKED CHEESE SOUFFLÉS


INGREDIENTS

Serves 8-12

50g Wild Garlic Leaves washed well and finely shredded (Vivienne picks hers fresh from the nearby woods)

70g butter

75g freshly grated Gruyére cheese

75g freshly grated Parmesan cheese

400ml whole milk

50g plain flour

4 large Free Range eggs separated (Vivienne's eggs are from her neighbours hens)

Just less than 400 ml seasoned double cream. Salt, pepper and freshly grated nutmeg to taste.




METHOD

Pre-heat oven to 200° C, 400° F Gas 6



1. Butter 8 large or 12 small ramekins well with butter from allowance.

2. Put the wild garlic in a pan with the milk, bring to the boil and set aside'

3. mix the remaining butter with the flour incorporating it well, then add the milk and wild garlic and cook until thick and smooth, stirring constantly. Cool for a short while.

4. Beat in the salt, pepper, nutmeg, Gruyére and then the egg yolks.

5. Whisk the egg whites in a very clean bowl until they form stiff peaks and then fold into the cheese mixture.

6. Spoon into the ramekins and arrange in a deep baking tin with boiling water halfway up the side of the dishes.

7.  Cook in the pre-heated oven for 15 to 20 minutes, allow to cool for 15 minutes and then turn out of the ramekins. (The soufflés can be frozen at this point until needed)
8. Arrange in a shallow oven-proof dish buttered and sprinkled with half the grated Parmesan cheese.

9. Pour the seasoned cream over the soufflés, sprinkle with the remaining Parmesan and bake again for 15 to 20 minutes until well risen. Serve at once.

Baked Free Range Eggs with Chorizo and Black Truffle Oil

As a head chef, creator of The Grumpy Chef blog, brand ambassador for IOShen Knives, writer for ONE Mag and with regular appearances on BBC Radio Manchester James Douglas is a busy guy so we’re lucky to get him to enter a dish for The Egg Award 2013!

Previously Head Chef at The Red Lion in High Lane, Stockport, he has recently moved within the company to take over at the award winning restaurant, Damson in Heaton Moor, Manchester where he’s also heading up a new restaurant project in the City on Deansgate with Exec Chef and Owner, Simon Stanley.



He describes his style as classic French and British Cuisine but with a twist, has dabbled in the popular molecular gastronomy area but believes that food shouldn’t be overly complicated and pushes his Team to rely on their own skills and the 'old school' processes before anything else.



In keeping with the ethos of The Egg Award 2013 he's a huge advocate of local and seasonal produce, his latest project is local foraging and with the team from the Red Lion has begun using their own Kitchen Garden and Polytunnel about a mile from the restaurant. He enjoys working with youngsters and has taught knife skills and basic French cuisine to the apprentices at Jamie Oliver’s 15 restaurant.

Baked Free Range Eggs

with chorizo and black truffle oil

(Serves 1)


Ingredients

200g      Tomato sauce
50g        White bloomer
30g        Chorizo
15g        Black truffle or extra virgin olive oil
1             Free range farm egg
Pinch    Maldon salt
Pinch    Cracked
Pinch    Chopped parsley



1.    Pre-heat the oven to 180oC.

2.   Dice the chorizo and bread.
3.   Warm the oil in an oven proof pan over a medium heat.

4.   Place the chorizo and croutons into the pan and toss regularly until golden in colour, being careful not to burn.

5.   Add the tomato sauce and bring to the boil.

6.   Make a small well in the centre of the pan and crack the egg into it.

7.   Place in the pre-heated oven for 6 - 8 minutes or until the white of the egg sets.

8.   Remove from the pan from the oven onto a heat proof tray or board and allow to cool for 1 minute.

9.   Season with the salt, pepper and parsley and serve.

You can use a larger pan and scale the recipe to accommodate more guests and the chorizo can be omitted for Vegetarians.  You can also add or replace ingredients and certain variations work extremely well.
